For the Love of Chocolate

A few years ago I had the great pleasure of hearing John Scharffenberger give a lecture at Blue Hill Stone Barns. I’ve never been much of a chocolate fan, but it was so interesting to learn about the history of chocolate and the differences between the end product available to us consumers. It was also fascinating to hear John’s philosophy on the chocolate making process, bringing his knowledge from wine and champagne production to the chocolate industry.

Does an extra $10,000 sound nice to you? If so, get your creative juices flowing. Scharffen Berger chocolate has partnered with Tutti Foodie again to host their annual chocolate adventure recipe contest. Entries need to be submitted by January 3, 2010, and must “reflect the spirit of adventure.” A winner will be selected in two categories – savory and sweet – and must include Scharffen Berger chocolate and at least one of the following ingredients:

  • Fresh mint (any varietal)
  • Crystallized ginger
  • Pandan leaf
  • Banana leaf
  • Sumac
  • Raw honey
  • Cacao nibs
  • Fresh or whole dried chili pepper
  • Malbec
  • Peanut butter
  • Black-eyed peas
  • Rice flour
  • Papaya
  • Cumin
  • Paprika (any varietal)
  • Smoked sea salt

Is your head spinning yet? Mine sure is! All I can think about is that movie Chocolat with Johnny Depp and Juliette Binoche. Remember how she mixed chocolate with all those exotic ingredients? Well, looks like that’s what the judges (including Mr. Scharffenberger and Matt Armendariz of Matt Bites) are looking for!
